Fantastic Breadmaker Rolls-Debbie and Mom

1 c Milk
1/4 c butter (half stick)
Heat in microwave for 1 minutes.
Pour in breadmaker, Add:
1 tsp. salt
1/4 c sugar
3c flour
1 egg
2 tsp rapid yeast

Run on dough cycle. When finished roll into a circle on a floured surface. Spray with pan spray to avoid sticking. Cut into 16-20 pieces (like pizza). Roll into rolls and make sure "tail" is tucked under roll. Spray pan or cover with parchment paper. Cover and allow to rise for 30 minutes. Bake at 350 degrees for 13 minutes (more for lower altitudes). Delicious, light, fluffy, sweet rolls.

This recipe is also great to use when making cinnamon rolls.
Or make into bread sticks, spread with butter and sprinkle with cinnamon and sugar when finished baking. Then dip in cream cheese icing.
I have also even made a jalepeno cheese bread. I rolled the dough out, chopped it up in 1x2 inch chunks, sprayed the pieces with pan spray and mixed with jalepeno and sharp cheddar cheese chunks and bake until cooked clear through. You can tell when a pan of bread is finished when you lick your finger and touch the bottom of the pan and it sizzles back.

Very versatile, easy and delicious bread recipe.

Tuna Melts

This is one of my family's go-to meals. Fast easy and tasty!
Sandwich stuffing:
Can of tuna
Mayo (more or less depending on your taste)

Sandwich fix-ins:
cheddar cheese, sliced
bread (I usually use wheat bread but would be good with a rye or white)
butter
Classen garlic pickles (yum- but optional)

Butter your bread on the outside. Top with sandwich stuffing, pickles and cheese top with second slice of bread. Stove top pan grill like a classic grilled cheese sandwich. Enjoy!

Artichoke Dip-Amy

2 cans artichoke, drained and chopped
1 c mayo
1 shredded parmesan cheese
8 slices bacon, cooked and crumbled
Dash of worchestershire sauce
Dash of garlic salt

Grease small cassorole dish. Mix all ingredients and put in dish. Bake at 325 for 25 minutes. Serve with wheat thins.

White Chicken Chili-Michelle

3 lbs. chicken (5 breast) cooked and cut up (You could also use whole rotisserie chicken)
1 onion, chopped
1 Tbsp. Oil---sautee' the onion in oil for a couple of minutes.
In pot combine:
1 Tbsp. salt
6 cans Great Northern Beans-drained and rinsed
1 Tbsp Cumin
1 tsp black pepper
3 cans chicken broth
1 (7 oz) can diced green chillies
3/4 tsp. Cayenne pepper
1 1/2 tsp Dried Oregano
Add:
Chicken and simmer for 15-20 minutes.
Remove from heat and add:
1 cup whipping cream
3 cups sour cream

This recipe make A LOT! I usually make a half recipe and it makes plenty for my little family. It's surprisingly delicious so enjoy!

Tortellini Soup-Amy

4 c chicken broth-bring to a boil.
Add: 9 oz. refrigerated cheese tortellini
-simmer for 4 minutes.
Add: 1 (15 oz) lite red kidney beans, drained
1 (15oz) italian diced tomatoes
1/2 tsp. dried basil (or fresh)
-simmer 4-6 minutes
Stir in 1 Tbsp. red wine vinegar

Top with shredded parmesan cheese. ENJOY!
